Octopus Baked in Clay Pot

1 octopus around 3kgs in weight
1 wineglass of olive oil
Juice of two lemons
3 cloves of garlic, chopped finely
Oregano, pepper
2 cups of water


Clean the octopus , wash and without straining place in the clay pot. Add all the other ingredients and bake in a medium oven for around one and half hours until the octopus remains just in the oil.

Fried Courgette Flowers

for the batter:
1 cup of flour
1 teaspoon salt
1 egg
1 cup of milk
3 desertspoons of oil

30 courgette flowers
¼ kefalotiri (salted hard cheese)
1 tin of filleted anchovies


Wash the flowers and put a cube of cheese and a small piece of anchovy inside each one. Dip the flowers one at a time in the batter and fry in hot oil until brown.
